Four Seasons - Crushing

Before vintage we are busy cleaning down equipment in the vintage shed and waxing the basket press ready for the first load of grapes.

Using an old pitch fork (the predator) we shovel the grapes by hand into the crusher which sits directly on top of the fermenters, eliminating the need to pump the must. This is the most gentle form of de-stemming which results in ferments consisting of predominantly whole berries.

Our crusher was built by Geoff Loechel, Christian’s father-in-law, and modelled on the old wooden Bagshaw crusher used at Rockford where Christian learned his trade.
